  1. 1 eggplant sliced
  2. 1/2 cup tofu cut in cubes
  3. 4 cloves garlic chopped
  4. 2 inch ginger sliced
  5. 2 tbsp soy sauce
  6. 1 tbsp mirin
  7. 1 tbsp sweet chilli sauce
  8. 1 tsp crushed peanuts
  9. 1 tsp seasame seeds
  10. Green oniins to garnish
  11. to taste Salt and some chilli flakes
  12. 2 tbsp olive oil
  13. 1 tsp szechwan powder
  14. 1 tsp vinegar

Instructions to make to make Eggplant & tofu

  1. Heat a pan and put olive oil. Once the oil is warm, add garlic & ginger.
  2. Cook the eggplants, sprinkle a bit of salt and keep aside.
  3. In the same pan add oil, tofu and pan fry it as per packet instructions.
  4. Meanwhile, mix soysauce, vinegar, mirin, szechwan, sweetchilli sauce in a bowl
  5. Once tofu is cooked, add eggplants and stir. Pour over this sauce mixture & stir.
  6. Sprinkle some sesame seeds and peanuts. Garnish with spring onions & serve.
